250 gms Paneer (Cottage Cheese) cut into 1 inch cubes
1/2 bunch spinach leaves
1/2 bunch Mustard Leaves
1/4 bunch Fenugreek Leavesoptional
2-3 Green Chilies, seeded and chopped
1 medium Onion, finely chopped
1 tablespoon Ginger Garlic paste
1 small Tomato, finely chopped
1/4 teaspoon Turmeric Powder (Haldi)optional
3 tablespoons Ghee (clarified butter) or Cooking Oil

Punjabi cuisine popular curry recipe it’s basically from India. Saag paneer is not only spicy and palatable recipe but also packs many healthy greens that are highly rich in nutrients, minerals and dietary fibers. This saag paneer recipe uses leafy greens like spinach, mustard leaves and fenugreek leaves to make it healthier and also to make it well balanced. You can use any or all of the leafy greens without much touching its overall taste. It is suggested to use freshly made paneer if possible otherwise, use ready made one available in market.
Step 1: Discard stems of all greens (spinach leaves, fenugreek leaves and mustard leaves) and rinse them in water.
Step 2: Blanch all the greens for 2-3 minutes by following the method of how to blanch spinach in the recipe of palak paneer.
Step 3: Drain the water and transfer all blanched greens in a blender jar.
Step 4: Add green chilies and 1/4 cup water. Blend them into medium coarse texture. According to your choice you can coarse the texture or blend them into fine puree.
Step 5: Heat ghee or oil in a pan over medium flame. Add onion sauté until it turns translucent. Add the ginger garlic paste and sauté them for a minute.
Step 6: Add chopped tomato and cook for 1-2 minutes. Add turmeric powder and mix well.
Step 7: Add crushed greens and salt.
Step 8: Stir well and cook for 4-5 minutes.
Step 9: Add paneer cubes.
Step 10: Mix well and cook for 3-4 minutes. Takeaway pan from the flame and transfer the prepared curry to a serving bowl. Healthy saag paneer is ready for serving.
