Fried rice is generally prepared by stir frying cooked rice and vegetables on high heat, which gives it a slightly crunchy texture and a delicious smoky flavor.Pineapple adds a dash of sweetness and color to this dish, which when lead by a mixture of sautéed onions, dry fruits, fresh garlic and soy sauce makes it a delightful and tangy dish.Like all the fried rice recipes, this dish rather calls for a day old refrigerated rice or left over rice from the night before.Freshly cooked rice has the powerful moisture and thus has tendency to mush together.

    Directions:

    Step 1: Heat some oil in a pan or wok. Add the finely chopped onions and cook on high heat till the onions turns into soft and translucent.

    Step 2: Add finely chopped Garlic and Green Chilies and fry for a few seconds.

    Step 3: Add finely chopped Capsicum and Carrots. Cook the vegetables on high a flame till the vegetables  cooked.If you like the Spring Onions, Peas, Beans, Corn Kernels etc then you can add.

    Step 5: Add freshly chopped pineapple pieces. Cook for a minute.

    Step 6: Now add roasted cashews to the pan.

    Step 7: Let the vegetables cook for 1-2 minutes.

    Step 8: Add 1 Tablespoon Soy Sauce along with Curry Powder. If you don’t have Curry Powder then u can just add a mixture of Red Chilli Powder, Coriander Powder, Cumin Powder and Garam Masala. Also add Salt to taste.

    Step 9: Add 2 cups of cooked white rice. You can add a little Salt and also add the oil while cooking the rice so that the grains do not stick with each other. It is also better to use the cooked rice on the previous day.

    Step 10: Mix everything well to coat the rice with the spices. Add some chopped Coriander Leaves to the rice and mix them well.
