Zeera Rice is a tempting rice dish of Punjabi cuisine. In its simplest form, it is steamed rice with nice flavor of pan fried cumin seeds. This simple and easy recipe also uses onion and cashew nuts stir fried in ghee to enhance the flavor and the palatability. Additionally, instead of using pressure cooker (see tips section to cook rice in pressure cooker) we used deep pan with lid to cook rice having every strand of its grain separated.

how to make zeera rice..
step-1 Soak basmati rice in water for 15 to 20 minutes and drain them.
step-2 Heat the ghee or oil in a deep pan. Add cashew nuts and stir fry until they turn to light brown. Then Transfer to a plate.
step-3 Add cumin seeds in the same ghee and saute them. Add sliced onion and saute until it turns light brown.
step-4 Add drained rice and saute for 2 to 3 minutes.
step-5 Add 1¼ cups hot water and salt and cook for 2 to 3 minutes over medium flame. After 1 or 2 minutes, cover pan with a lid and cook over low flame for 8 to 10 minutes. Do not open the lid in between otherwise rice may not cook the properly.
step-6 Turn off flame and let it stand for 8 to 10 minutes. After 9 or 10 minutes, open the lid and transfer cooked zeera rice to plate.
step-7 Garnish it with fried cashew nuts and serve hot with dal fry or dal tadka.
